Río Grande's Two Rebuilt Resorts Now Cover Every Night of the Dinner Week

October 22, 2026

Four Seasons Resort and Residences Puerto Rico set Monday, October 19, as opening night for Perla, its new supper club at Bahía Beach. Perla serves dinner from 6:00 to 10:00 p.m., and seating is on the outdoor terrace only. A few miles west along the coast, Wyndham Grand Rio Mar lists Iguanas Cocina Puertorriqueña as reopening October 1, open Thursday through Monday until 1:00 a.m.

Put the two resorts' posted hours side by side and they rarely compete. Bahía Beach covers the early, unhurried dinner. Río Mar covers the nights that run late. Between them, Río Grande now has a table worth booking every night of the week. For anyone who lives between the rainforest and the water, that changes where a weeknight dinner happens.

Both resorts start this fall rebuilt

Both properties have just come out of major changes, which is why the timing matters.

The Bahía Beach resort operated as The St. Regis Bahía Beach Resort until November 2025, when it became a Four Seasons. News is my Business reported on October 6 that the property has received one Michelin Key as it nears its first anniversary under the new brand. The St. Regis earned the same distinction in October 2025. The Michelin Guide uses one Key to mean "a very special stay."

Río Mar took longer. The owner, LionGrove, bought the resort in 2022 and kept it under the Wyndham Grand flag. The renovation went one phase at a time. News is my Business described the official reopening in February 2026, after $70 million of work over four years. In the same month, El Nuevo Día reported that the owner was already looking at further investment.

So this is the first fall that both resorts have run in their finished form, and each has put its new energy into a different part of the evening.

Perla is built for a long, slow dinner

Perla is the work of Executive Chef Víctor Rosado. Four Seasons describes it as a supper club built around sobremesa, the habit of staying at the table long after the meal is over. The menu suits that pace:

  • A Champagne, Martini and Caviar Cart, plus caviar service led by the chef
  • Dressed oysters and Hamachi with guanábana ponzu
  • Chilean Sea Bass and Prime New York Strip
  • Large-format Tomahawk Steak and Whole Dover Sole

The posted dinner menu starts at $18 for individual spreads. Mains include chicken at $44 and striploin at $75, and the 32-ounce tomahawk tops the menu at $195. That spread works for a couple's weeknight dinner and for a table of six sharing large plates. Reservations go through the resort at (787) 809-8110.

The general manager made clear that the restaurant is meant for people beyond the hotel's guests:

"Perla and Ocean Terrace each bring a distinct identity to our culinary program while reflecting our commitment to exceptional quality, genuine hospitality, and creating experiences that resonate with both guests and residents."

Pablo Molinari said this in the resort's September 30 announcement.

The same announcement renamed the lobby bar. The bar once called El Bembé is now Palm Court. The resort says it keeps the Puerto Rican and Latin-inspired flavors and simply carries a new name. If a friend suggests meeting at El Bembé, they mean Palm Court.

The schedules fit together

Last orders at Perla come at 10:00 p.m. That closing time explains how the two resorts split the week. Below are the regular dinner and evening venues by night, taken from each resort's posted hours.

Night Bahía Beach, Four Seasons Río Mar, Wyndham Grand
Monday Palm Court dinner and sushi Roots, Caicu, Amaya, Iguanas
Tuesday Palm Court dinner and sushi Roots, Caicu, Palio
Wednesday Palm Court dinner, Beach Club until 9 Roots, Caicu, Palio
Thursday Palm Court dinner and sushi, Beach Club until 9 Roots, Caicu, Palio, Iguanas
Friday Palm Court dinner and sushi, Beach Club until 9:30 Roots, Caicu, Palio, Amaya, Iguanas
Saturday Palm Court dinner and sushi, Beach Club until 9:30 Roots, Caicu, Palio, Amaya, Iguanas
Sunday Palm Court dinner and sushi, Beach Club until 9 Roots, Caicu, Amaya, Iguanas

Perla's 6:00 to 10:00 p.m. dinner service sits on top of the Bahía Beach column. The resort has not yet said which nights it runs.

Palm Court serves dinner from 4:00 to 10:00 p.m., with sushi from 5:00 to 10:00 p.m. every night except Wednesday. Beach Club is closed Monday and Tuesday. At Río Mar, Palio, the Sicilian-style room, is open Tuesday through Saturday. Amaya is open Friday through Monday. Their weeks overlap on Friday and Saturday only. So Río Mar always has one of its two sit-down rooms open, and on weekends it has both.

The quiet nights fall early in the week. On Tuesday and Wednesday, Palio is the only sit-down room open at Río Mar. Roots Coastal Kitchen covers the rest, open daily from 6:30 a.m. to 10:00 p.m. under Executive Chef Ramón Carrillo, who works with Top Chef finalists Jeff McInnis and Janine Booth. On those same nights, Bahía Beach is down to Palm Court, plus Perla once its nights are posted.

Río Mar keeps the late hours

After 10:00 p.m., Río Grande's evening moves west.

Caicu, which the renovation remade as a bar and lounge with Caribbean bar bites and cocktails, stays open until 1:00 a.m. every night. Iguanas Cocina Puertorriqueña keeps the same 1:00 a.m. close Thursday through Monday. The renovation also rebuilt Casino Rio Mar and added The Vault, a speakeasy cabaret with live performances inside the casino.

That points to a simple order for a Friday or Saturday. Start with an early terrace dinner at Perla or Palm Court. Then drive to 6000 Rio Mar Boulevard for a late drink at Caicu or a set at The Vault. Doing it the other way round leaves you arriving at Bahía Beach just as Perla's 10:00 p.m. close approaches.

Daytime at Río Mar has its own weekend fixture. Seabreeze is the casual beachside restaurant added in the renovation, with picnic tables, ping pong, burgers, tacos and an ice cream station. It is open Friday through Sunday from 11:00 a.m. to 6:00 p.m. At Bahía Beach, Sand Dollar serves weekends from noon to 5:00 p.m.

November fills the morning

The last gap is breakfast, and Bahía Beach fills it next.

Ocean Terrace is listed for early November 2026 beside the resort's pool and shoreline. It will serve breakfast, lunch and dinner from a Mediterranean-inspired menu. The announced dishes include Charred Octopus, Mussels al Limone, Margherita Pizza and an Italian Adobo Half Chicken. The announcement also mentions recurring brunches and seasonal programming, though it gives no dates yet. The posted breakfast menu runs from $7 for bread to $28 for bagels and lox or arroz con huevo.

Until then, El Cocoteros Grill at Bahía Beach is open daily from 7:00 a.m. to 6:00 p.m. Palm Court serves breakfast from 7:00 to 11:00 a.m. At Río Mar, Roots opens at 6:30 a.m. every day.

Once Ocean Terrace opens, Bahía Beach will have a new kitchen for dinner and a new one for daylight hours within a few weeks of each other. That lands just before the resort's first anniversary as a Four Seasons in November. Opening dates and hours tend to shift in a restaurant's first weeks, so call the resort before planning around a specific night.
